Historically, the word “Venison” referred to what we now describe as game meat – or meat that was hunted. Now, Venison refers specifically to meat from the various deer species. Here on the Isle of Skye we have Red and Roe deer and we believe there is no better red meat available. During the winter months, the freezer at Bùth Eilean Iarmain has a good supply of various cuts for sale. Cooking with Venison is easy – and it can be treated very much like beef – but to inspire you, we’re sharing some of our favourite recipes and tips to help you make the most of this wonderful free-range product.
